And just like that, summer has sneaked in and Ramadan is just around the corner. The current hot hot hot weather (We're not even at the peak yet!) brings an avalanche of flashbacks of the short-lived winter.
Although it was super quick, I must say that Ed and I have made the most out of the cool temperature with consecutive weekend getaways and plenty of al fresco lunch dates! And it's just right that we bid adieu to the crisp winter breeze and welcome the wild summer sun with a fun road trip.
Destination: Fujairah!
Along with some of our blogger friends, we journeyed to one of our favorite
zen spots in the UAE -
Fujairah Rotana Resort and Spa. Ed and I experienced a relaxing romantic retreat in this amazing beach resort four years ago; hence, we were delighted to be back even just for a daycation!

Our main agenda was to have an egg-citing Easter Brunch, and Fujairah Rotana Resort delivered the most fun and colorful feast! The Easter Brunch was held at Waves; a laid-back restaurant tucked in between the resort's beautiful garden and pristine private beach.
International flavors were vibrantly presented. Ed went back and forth to the live cooking stations. I, on the other hand, was hooked to the Mexican station because it has all the works... DIY tacos and nachos, complete with all the toppings!

The starters were magnificently arranged indoor. I barely couldn't decide what to have first from the stunning selection of canapes, gazpacho, and cheeses.

For dessert, an adorable variety of sweet treats wowed the guests; most especially me! You know how much I love the cute and colorful stuff! They got chocolate minions, chick-shaped cake pops, and pastel-colored meringue. All almost too cute to eat!

Right after brunch, we headed out to the resort's private beach! Tranquil and picturesque, I silently wished we had enough time to laze on a sunbed and wait for the sunset!

I couldn't think of a better way to end winter than this exciting road trip and wonderful Easter brunch! Thanks to Ferry and the rest of the team at Fujairah Rotana for taking care of us!
